Make Gløgg with us!

We're going to set about making gløgg for Christmas. The recipe we are following is from The Nordic Baking Book by Magnus Nilsson, which is an amazing resource for all things Scandinavia. The recipe calls for letting the glogg sit for a week, so if you make it on December 18th, it'll be ready by Christmas day.

MAGNUS'S GLOGG

Preparation and cooking time: 30 minutes

Macerating time: 1 week

Makes: 1 litre/34 fl oz (4 1/2 cups)

  • 750 mll/25 fl oz (3 cups) young red wine*
  • 1 knob fresh ginger
  • 1 vanilla bean
  • 5 cardamom pods
  • 20 cloves
  • 2 cassia cinnamon sticks
  • 10 black peppercorns
  • 1 orange, sliced (rind and all)
  • 1 lemon, sliced (rind and all)
  • 100 ml/3 1/2 fl oz (1/3 cup plus 1 T.) sweet Madeira* (a dessert wine)
  • 50 g/5 oz (3/4 cup) sugar
  • a dash of brandy*
  • 3 T. honey, or to taste

**MY SUBSTITUTIONS. Which are going to alter the taste obviously, but for me, cooking/baking is about using what you have on hand. Because let's be honest, there's no way I'm going to be drinking brandy outside of this recipe.

Red wine: I have a boxed red wine on hand called "Nighthawks Blend" which I'm sure will do just fine...

Madeira: I'm going to be using this bottle of fine tawny Porto

Brandy: I only have a bourbon whiskey available...so that. Other subtitutions could be Aquavit, vodka, or rum.

Combine all the ingredients, except for the honey, in a sterilized glass jar. Seal, and let sit for a week, shaking it from time to time to make sure the sugar doesn't just settle at the bottom. 

When you're ready to drink the wine, strain it through a fine-mesh sieve into a pot. You don't have to use it all at once, just the amount you need and let the rest continue to macerate in the jar. Heat the wine gently, adding the honey until it's sweet enough for your taste.
